Agar (also known as agar-agar) is a natural hydrophilic polysaccharide extracted from red algae (Rhodophyceae). It is a linear galactan polymer mixture composed of agarose (neutral gelling fraction) and agaropectin (charged, non-gelling fraction). It appears as white to yellowish translucent strips, flakes, or powder. It is odorless, tasteless, and exhibits unique thermo-reversible gelling properties.
